If it weren't for the luminous orange ‘flying fish’ and the ethereal Reef Spawn lightglobe sculpture, Flying Fish's most spectacular feature - apart from the food - could well be the men's toilets. Flying Fish is Sydney's latest five star dining experience, at Pyrmont's maritime heritage listed Jones Bay Wharf.

"The aim was to take advantage of the view and to bring the outdoors indoors to an extent," says designer Michael McCann, Dreamtime Australia Design, explaining the extensive and unusual use of glass. "Another reason is to allow the customers to enjoy the beautiful ironwood walls."




Stylish and advanced frameless glazing complements the handmade glass artworks. Features include a sleek glass wine fridge, a glass lift, frameless doors and balustrades, and glass restrooms with transforming glass cubicles [clear when vacant, frosting when occupied] and a 'waterfall' masquerading as a urinal.

"Dealing with Express Glass was a pleasure" says Michael. "Adrian made working with a large company seem like it was a small company, dealing with you one-on-one. A highly professional job."
